Below is a sample of two day diabetic diet menu:

Diabetic Diet Menu – DAY ONE

1. Breakfast:

½ cup fill with melon cut in pieces;¼ cup with sliced apricots or peaches;4 ounces soybean milk;2 pieces French toast (made from soybean milk and vegetable oil).

2. Morning Snack:

½cup  fresh grape6 low-fat crackersCarbonated/Mineral water

3. Lunch:

1 cup mushrooms soup with  barley2 ounces smoked seitan (a meat substitute – protein food)½ cup green beans salad with two teaspoons sesame2 large spoons fat-reduced salad dressing8 ounces soymilk

4. Afternoon Snack:

½ cup chocolate pudding (without sugar)

5. Dinner:

1 cup chilly with  lens¼ cup prepared Textured Vegetable Protein (TVP)½ cup boiled or fried carrots½  cup fresh pineapple in pieces1/3 cup white rice

6. Evening Snack:

½  cup pretzels;8 ounces soybean milk.

Diabetic Diet Menu – DAY TWO

1. Breakfast:

1/3 cup  cranberry juice;3/4 cup cooked oats with 1/2 banana;1 teaspoon vegan margarine;8 ounces soybean milk.

2. Morning Snack:

3 cups low-fat popcorn;2 teaspoons  nutrient yeast;1/2 cup orange juice.

3. Lunch:

6 ” pie stuffed with 2 ounces meat substitute;lettuce, radishes, cucumbers;1 cup grated cabbage;1- ½ spoon vegan mayonnaise;8 ounces soybean milk.

4. Afternoon Snack:

Fruit smoothie made from:

8 ounces soybean milk, 2 ounces silken tofu;1/2 cup frozen or fresh berries;3 sugar-free ginger snaps.

5. Dinner:

1/2 cup  baked eggplant;1/4 cup tomato sauce;1/3 cup brown rice;1/2 cup black beans;One baked apple.

6. Evening Snack:

2 large spoons peanut butter with 6 crackers.

These two day diabetic diet menus will enrich your diet with all the necessary nutritious and it will balance the sugar levels in the blood stream and regulate the sugar levels to the allowed limit.

Also this diabetic diet will feel you with energy and give you sense of satiety. It is great for those who want to reduce weight without starving too.
